Spinach and feta pinwheel

These tasty treats are as good for breakfast as they are as an evening snack. Sauteed spinach and feta cheese is rolled in puff pastry to create lovely spinach and feta pinwheels. We use ready made puff pastry to make this recipe as easy as possible.

Ingredients

  • 200 g feta cheese
  • 375 g puff pastry
  • 100 g spinach
  • 10 g grated parmesan
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder

    Pre-heat the oven to 200°C/400°F/Fan 180°C.

    Add the spinach to a large pot on medium heat, and allow it to wilt down. It might seem like there’s a lot of spinach, but when it’s heated, it decreases in size by quite a lot. Keep stirring the leaves to prevent them from burning on the bottom.

    When it’s properly wilted down, remove it from the pot and transfer to a mixing bowl. Add powdered onion and garlic, along with crumbled feta cheese. Use a spoon to combine all the ingredients.

    Roll the puff pastry to a sheet of approximately 20 x 30 cm. You will need a rolling pin, unless you’re using ready rolled puff pastry.

    Then, spread the feta and spinach mixture on top.

    Starting from the shortest side of the rectangle, roll the puff pastry into a log.

    Use a sharp knife to cut it into 12 equally sized pinwheels, and place them on a baking tray or silicone baking sheet.

    Sprinkle some parmesan on top of each pinwheel, and add them to the oven.

    Bake for 15-30 minutes, or until the puff pastry is golden and flaky.
