- 2Preheat the oven to 400° and line a cookie sheet with aluminum foil.
- 3Carefully cut squash in half lengthwise and scoop out the seeds and strings.
- 4Spray foil with non-stick cooking spray and place squash cut side down on the baking sheet.
- 5Spray the other side of the squash and roast for 50 minutes.
- 6Remove from the oven, cool, scoop out squash and puree.
