📝 Ingredients

  • 1 pound cassava
  • 2 cups coconut milk
  • 2 teaspoons vanilla
  • 1 teaspoon almond extract
  • 1 cup all-purpose gluten-free flour
  • 1/2 cup coconut flakes
  • 1 cup cane sugar
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon fresh ginger
  • 1 teaspoon salt
  • 1/2 cup raisins ((optional))

  1. 1Preheat oven to 375 degrees F. Spray or light brush a baking pan with oil. Set aside.
