Buffalo Chicken Quesadilla

Buffalo Chicken Quesadillas are loaded with shredded buffalo chicken and lots of Monterey jack cheese. They make a great appetizer, lunch, or dinner.
Ingredients
- 12 ounce buffalo sauce
- 2 boneless skinless chicken breasts
- 1 yellow onion, (diced)
- 2 teaspoons pepper
- 2 teaspoons Slap Ya Mama
- 2 teaspoons paprika
- 16 ounces Monterey Jack cheese, (shredded)
- 4 large tortillas
Instructions

In a medium saucepan filled with water, boil chicken until no longer pink.

Drain water and add chicken to a medium bowl and shred chicken.

Add chicken and seasoning to a medium saucepan, stirring to combine.

Pour in buffalo sauce, stir and heat over medium heat until hot.

Using a large frying pan over medium high heat, heat tortillas up one at a time.

Add a layer of shredded cheese on half of the tortilla, followed by chicken mixture and then more cheese.

Fold tortilla in half and fry until golden on both sides and cheese is melted.

Remove from pan, slice into three triangles and repeat with the remaining tortillas.

Serve with your favorite dipping sauce.
