Ingredients

  • 3 medium potatoes (peeled and chopped)
  • 2 tablespoons coconut oil
  • 1/4 teaspoon cumin seeds
  • 1 onion (chopped)
  • 4 cloves garlic (minced)
  • 1/2 inch ginger (grated)
  • 1-10 ounce bag chopped spinach (fresh or frozen)
  • 2 teaspoons ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground paprika
  • sea salt (to taste)

Instructions

    Boil potatoes in large pot until tender, about 15 minutes. Drain water and set aside.

    Heat oil in a large saucepan on medium-high heat, add cumin seeds until sizzling. Add onions and cook until soft, about 3 minutes.

    Add garlic and ginger and cook for another minute, stirring constantly

    Add coriander, cumin, turmeric, paprika.

    Stir in spinach and cook stirring until wilted, about 2 minutes.
