📝 Ingredients

  • 1 lb. red snapper fillets, or other firm white fish fillets
  • Adobo All-Purpose Seasoning with Pepper
  • 2 tbsp. Extra Virgin Olive Oil
  • 1 small red onion, thinly sliced
  • 1 small green bell pepper, thinly sliced
  • 1 tsp. Minced Garlic
  • 1/2 Fancy Pimientos
  • 1 tbsp. Apple Cider Vinegar
  • 1/2 tsp. Adobo All-Purpose Seasoning with Pepper
  • 1 tsp. Tomato Paste
  • 1/2 cup water

👨‍🍳 Instructions

  1. 1Season fish with adobo.
  2. 2In large skillet, heat oil on medium high. Cook fillets—1 minute on each side. Remove to a warm platter.
  3. 3Stir remaining ingredients into skillet. Bring to boil, lower heat, cover and simmer 5 minutes.
  4. 4Return fish to skillet. Cover and simmer until fish is cooked, about 3-5 minutes.
