Start the day by preparing a delicious breakfast: Huevos Motuñelos. This succulent breakfast is layered with fantastic flavors, starting with corn tortillas that are browned and topped with delicious GOYA® Refried Black Beans, then complemented with a fantastic tomato sauce, and fried eggs. 📝 Ingredients

  • 3 tbsp. GOYA® Extra Virgin Olive Oil, divided
  • 1 jalapeño pepper, finely diced
  • 1 medium onion, diced
  • 1 tbsp. GOYA® Minced Garlic
  • 1/2 tsp. GOYA® Adobo All-Purpose Seasoning with Pepper
  • 1 can (8 oz.) GOYA® Tomato Sauce
  • 1 packet GOYA® Chicken Flavored Bouillon
  • 8 GOYA® Corn Tortillas
  • 1/2 cup plus 1tbsp. GOYA® Vegetable Oil, divided
  • 8 slices ham steak, cut into 1/4-inch cubes
  • 8 eggs
  • 1 can GOYA® Refried Black Beans
  • 2 cups frozen GOYA® Sweet Peas, cooked according to package directions
  • 1/2 cup crumbled GOYA® Queso Fresco
  • 1 package frozen GOYA® Ripe Plantains, cooked according to package directions

👨‍🍳 Instructions

  1. 1In large skillet set over medium heat, add 1 tbsp. extra virgin olive oil. Add jalapeño, onion, garlic and adobo seasoning; cook, stirring occasionally, for 3 to 5 minutes or until starting to soften. Stir in tomato sauce and bouillon; bring to a boil. Reduce heat to medium-low and cook, stirring occasionally, for 8 to 10 minutes or until thickened.
  2. 2In another large skillet set over medium-high heat, add 1 tbsp. extra virgin olive oil. In batches to avoid crowding and adding remaining extra virgin olive oil as needed, fry tortillas, turning once, for 1 to 2 minutes or until crispy. Drain on paper towel–lined baking sheet.
  3. 3In the skillet used to fry tortillas, set over medium heat, add 1/2 tbsp vegetable oil. Add ham steak and sear, stirring occasionally, for 5 to 7 minutes or until golden brown. Transfer to a bowl.
  4. 4In the same skillet set over medium heat, add remaining vegetable oil. Crack eggs into skillet and fry for 3 to 4 minutes or until cooked through.
  5. 5Pour refried beans into medium microwave-safe bowl. Cover with paper towel and microwave on HIGH, stirring halfway through, for 60 to 90 seconds or until heated through. Set aside.
  6. 6Spread each crispy tortilla with refried beans. Spread with tomato sauce mixture and a fried egg. Top with sweet peas, ham and queso fresco. Serve with plantains.
