Tasty, juicy oven baked jerk chicken made with bold Jamaican jerk marinade. An easy way to make authentic jerk chicken in the oven at home.
📝 Ingredients
- 1 cornish hen or whole chicken
- 1 1/4 cup jerk marinade (make using the recipe or buy store brand)
- 1 cup jerk bbq sauce
👨🍳 Instructions
- 1Make marinade. Set aside.
- 2--- Spatchcock ---
- 3Spatchcock the chicken by cutting the backbone out from the chicken via a sharp knife or quality kitchen shears.
- 4Open the chicken and lay flat cavity side down. Press down on the chicken using both hands to flatten. You should hear the breast bone crack.
- 5--- Marinate the Chicken ---
- 6Coat the chicken with 1 cup of the marinade thoroughly. Reserve the remaining 1/4 cup for the bbq sauce.
- 7Place in a large ziplock bag, seal, and marinate overnight.
- 8--- Make the Sauce ---
- 9Mix the BBQ sauce and the remaining jerk marinade together in a small bowl. Set aside
- 10--- Cook the Chicken ---
- 11Remove from bag, set aside, and allow to come to room temperature.
- 12Place cast iron skillet in oven and preheat to 500 degrees.
- 13Remove the skillet. Add the chicken cavity side down. Place in the oven and roast 15-20 minutes.
- 14Remove and brush outside of chicken completely with the glaze. Add back to the oven and roast another 3-4 minutes.
- 15Remove, allow to cool 5 minutes. Chop into smaller pieces and serve with the remaining sauce.
