Green Chile Egg Casserole Recipe

Instead of loading up the eggs with shredded cheese, we're swapping in cottage cheese for a lower-fat, high-protein breakfast that's great for meal prep or hungry holiday guests.
Ingredients

- 10 eggs
- 2 egg whites
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 2 8-ounce cans diced green chiles (, drained)
- 1/2 cup finely chopped yellow onion
- 1/2 cup finely chopped red bell pepper
- 4 cups cottage cheese ((1 quart))
- 8 ounces shredded Monterey Jack cheese
- 1/2 teaspoon freshly ground black pepper

Melt the butter in the baking dish. Preheat the oven to 400°F. Place 1/4 cup butter in a 9 X 13-inch baking dish and melt in the preheated oven.

Mix the eggs, chillies, and cheeses. In a large bowl, whisk 10 eggs with 2 egg whites until combined and fluffy. Whisk in 1/2 cup all-purpose flour and 1 teaspoon baking powder until smooth. Add 2 8-ounce cans diced green chiles, 1/2 cup finely chopped yellow onion, 1/2 cup finely chopped red bell pepper, 4 cups cottage cheese, and 8 ounces shredded Monterey Jack cheese. Season with 1/2 teaspoon freshly ground black pepper, and mix well to combine.

Bake the eggs until set. Pour the egg mixture into the baking dish. Bake for 20 minutes, then reduce the temperature to 350°F and bake for 45-50 minutes or until the eggs are set.
