Chipotle Lime Marinated Eggs Recipe I made these chipotle lime marinated eggs on a day when I honestly just wanted to try something new that tasted bright and spicy, but without depending on standing in the kitchen forever. I’d been thinking about all the lime marinated eggs and chipotle eggs videos that kept popping up […]

📝 Ingredients

  • 4 medium boiled eggs
  • 3 tbsp chipotle in adobo (use mostly sauce, a little chili for color)
  • 1 lime (juice)
  • 1/2 cup water
  • 2 tsp honey (or agave or coconut sugar)
  • small handful cilantro sprigs (not leaves)
  • pinch smoked paprika for extra red hue

👨‍🍳 Instructions

  1. 1Whisk chipotle, lime juice, water, and honey until smooth. Add cilantro sprigs.
  2. 2Pat peeled eggs dry then submerge completely. Cover and refrigerate overnight (8–12 hours).
  3. 3Slice before serving; spoon a little of the red marinade over for gloss and flavor.
  4. 4These will last for 3-5 days in an airtight container in the fridge if they are medium-boiled eggs. Hard-boiled eggs can last 5 – 7 eggs since the yolk will not spoil as quickly.
