Cook a complete Chicken Fajitas dinner quickly in your air fryer. Perfectly seasoned chicken, bell peppers and onions will be cooked in 10-15 minutes, ready to fill a tortilla, or top a salad or bowl of rice.

📝 Ingredients

  • 2 large chicken breasts, (boneless, skinless (or 4 - 6 thighs))
  • 1 tbsp olive oil, (extra virgin)
  • 3 large bell peppers, (one red, one yellow, one orange)
  • 1 medium red onion, (thinly sliced)
  • 3 tbsp fajita or taco seasoning mix, (see ingredients in Notes below)
  • guacamole, (or cubed or sliced avocado)
  • pico de gallo, (or salsa)
  • lime quarters
  • cilantro leaves, (chopped)
  • sour cream
  • shredded cheese
  • tortillas

👨‍🍳 Instructions

  1. 1Slice peppers, chicken and onion: Start by slicing the peppers and chicken into strips no more than 1/2 inch wide. You want them to cook at the same rate, so try to keep them roughly the same size. Slice the onion.
  2. 2Toss with oil and seasoning: Toss the peppers, onions and chicken with a small amount of oil, then sprinkle with fajita seasoning and toss until well coated.
  3. 3Oil basket: Brush the basket of your air fryer with a thin layer of oil. It's best to use an oil with a high smoke point, like avocado oil or grapeseed oil.
  4. 4Preheat your air fryer to 380°F. for 3 minutes.
  5. 5Add mix to basket: Add the mixture (chicken, peppers and onions) to the air fryer basket, shaking to distribute evenly. Depending on the size of your air fryer, you may have to cook these in two batches. Cook half and keep warm while you cook the other half.
  6. 6Air fry at 380°F. for 10 - 15 minutes, pausing, removing the basket and shaking it to redistribute the fajita mixture every 4 minutes or so. Check the internal temperature of the thickest part of the chicken with an instant-read meat thermometer. It should register 165°F. to be safe.
  7. 7Serve with warmed tortillas, and offer toppings like avocado or guacamole, salsa or pico de gallo, sour cream, cilantro, and lime slices.
