Low-fat Pork and Prawn Jambalaya is a healthier version, still packed with fantastic smoky flavours. All cooked up in one pot and ready in 35 minutes! Slimming World Friendly only 1/2 syn person!
📝 Ingredients
- Spray Oil (Frylight )
- 500 grams Pork Mince (5% Fat )
- 4 tsp Smoked Paprika ((not Hot or sweet Paprika))
- 1 Red Onion
- 2 (Bell) Peppers (Red & Orange)
- 2 tsp Garlic Puree (or use 4 Cloves of Garlic crushed)
- 1 tsp Chilli Puree (Or 1 chopped chilli )
- 200 grams Long Grain Rice
- 400 grams Chopped Tomatoes (we used 1 can of chopped tomatoes )
- 450 ml Chicken Stock (made with a 2 stock cubes)
- 140 grams Cooked Prawns
- 2 tsp Mixed Herbs (Dried Oregano, Basil & Thyme)
- 2 Spring Onions
👨🍳 Instructions
- 1Brown: Spray a lidded non-stick pan with Spray Oil. Brown of 500 grams Pork Mince with 4 tsp Smoked Paprika on medium heat for 5 mins.
- 2Remove from the pan leaving the excess paprika flavoured cooking oil behind. Finely chop 1 Red Onion and fry for a few minutes.
- 3stir: Add 2 (Bell) Peppers , finely chopped2 tsp Garlic Puree,1 tsp Chilli Puree, 2 tsp Mixed Herbs 400 grams Chopped Tomatoes ,200 grams Long Grain Rice and stir all together.
- 4boil: Add 450 ml Chicken Stock and bring to the boil. Put a lid on and simmer for 10 mins.
- 5Cook: Remove the lid add the cooked pork from step 1. With 140 grams Cooked Prawns, stirring for a further 5 mins until the pork and prawn have heated through and the rice has soaked up all the liquid.Finely chop 2 Spring Onions and sprinkle on top Enjoy!!
