A delicious hearty salad of cold rice, veggies and tuna. Perfect for a pot luck or a lighter lunch!

📝 Ingredients

  • 2 cups of cooked long grain basmati rice, cold
  • 2 tbsp olive oil
  • 1 lemon juice and zest
  • 3 green onions, finely chopped
  • 1 red bell pepper, finely diced
  • 1/2 cup corn, canned or thawed
  • 1 cup peas, canned or thawed
  • 2 cans tuna, drained
  • 6 tbsp mayonnaise
  • 4 tbsp yogurt
  • 2 tbsp milk
  • salt and pepper to taste

👨‍🍳 Instructions

  1. 1Break apart any clumps of the rice, then add in green onions, red bell pepper, corn, and peas.
  2. 2Add the drained flaked tuna to the mix. I like to break apart the tuna with a fork before dumping it in to make sure its not clumpy.
  3. 3Seperately, mix together the lemon juice and zest, olive oil, mayonnaise, yogurt, milk and salt and pepper to form your dressing.
