📝 Ingredients

  • 2 pounds beef stew meat
  • 1/4 cup flour
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon dried thyme
  • 1 onion (diced)
  • 1 pound baby yellow potatoes (halved)
  • 1 cup carrots (chopped)
  • 1 cup celery (diced)
  • 2 tablespoons tomato paste
  • 6 cups beef broth
  • 2 tablespoons balsamic vinegar
  • 1/4 cup cornstarch

👨‍🍳 Instructions

  1. 1Place the stew meat in the bottom of the slow cooker. Sprinkle the flour, garlic powder, thyme, salt and pepper over the meat and toss to coat it on all sides.
  2. 2Add the onion, potatoes, carrots and celery to the crockpot. Then add the beef broth, tomato paste, and vinegar and stir.
  3. 3Close the lid and set the slow cooker to low for 6-8 hours.
  4. 430 minutes before you want to eat, open the slow cooker and use the liquid from the slow cooker to mix with the corn starch until you form a slurry (thin paste). Mix the slurry into the crockpot and continue to cook for 30 minutes.You can add additional cornstarch to thicken it more, or less to make it thinner.
