Strawberry Agua Fresca (agua fresca de fresa) is an easy Mexican drink of refreshing fruit water that is lightly sweetened and uses fresh summer strawberries.
📝 Ingredients
- 4 cups fresh strawberries (hulled and quartered)
- 1/2 cup + simple syrup* (recipe in instructions)
- 1/3 cup lime juice (freshly squeezed)
- 8 cups cold water
- extra strawberries and limes for garnish (optional)
👨🍳 Instructions
- 1To make simple syrup, combine 1 cup water with 1 cup granulated sugar in a small saucepan. Stir over medium heat until sugar dissolves or mixture starts to boil. Remove from heat and cool slightly. (Yields approximately 1 ¼ cups of simple syrup.)
- 2Blend strawberries with ½ cup of simple syrup and 1 cup of cold water until smooth.
- 3Set a fine mesh strainer (with a layer of cheesecloth, if you have it) over a large pitcher. Pour the strawberry mixture through the strainer. Use a spatula to press the fruit/pulp through. Repeat if needed. Discard the seeds/pulp.
- 4Add the remaining 7 cups of water and lime juice to the pitcher. Stir and add extra simple syrup to desired sweetness, if needed. Keep cold, or serve with ice.
