📝 Ingredients
- 1 tablespoon canola oil
- 2 garlic cloves (minced)
- 1 tablespoon fresh ginger (minced)
- 3 eggs (scrambled and chopped into bite sized pieces)
- 4 cups Minute Read to Serve Whole Grain Brown Rice
- 3 cups cooked protein (cut into bite sized pieces (I used calamari and shrimp))
- 1 medium bell pepper (diced)
- 8 scallion (sliced thinly (set aside 2 tablespoons for garnish))
- 1/4 cup low sodium soy sauce
- 1/2 teaspoon sesame oil
- 1 teaspoon agave nectar
- 1/4 teaspoon ground cumin
- salt and pepper (to taste)
👨🍳 Instructions
- 1Mix the soy sauce, sesame oil, agave nectar and cumin.
- 2Heat a large skillet over medium heat.
- 3Add the canola oil, garlic, scallions, ginger and red bell pepper. Cook for 4-5 minutes, or until the veggies soften.
- 4Add the rice into the pan, along with the soy sauce mixture. Cook the rice for 10 minutes, stirring occasionally, to allow the soy sauce to absorb into the rice.
- 5Add the cooked protein and scrambled eggs, and stir to combine. Cook for another 5 minutes, tossing occasionally.
- 6Season the mixture with salt and pepper to taste, then garnish with the remaining chopped scallions.
- 7Serve immediately.
