Leftover Potato Patties

Turn leftover mashed potatoes into a really simple and delicious meal perfect for anytime of the day. These Leftover Potato Patties are so versatile and can be cooked on the stove or air fryer.
Ingredients
- 600 g mashed potato (cold)
- 2 eggs (whisked)
- 1/2 tsp salt
- pinch black pepper
- 2 tbsp sunflower oil (for pan frying)
- spray oil (for air frying)
Instructions

Take 600g leftover mashed potato out of the fridge and break it up using a fork

Add 2 eggs and salt & pepper if required. Mix thoroughly

--- To pan fry ---

Heat 1 tbsp oil in a large frying pan over a medium heat
- 5
Scoop a large spoonful of the mixture into the pan and spread out to form a patty

Allow to cook for around 4 minutes on each side until golden brown and then flip and cook for the same amount of time on the other side

Keep cooking until all of the mix is used up. Don't overcrowd the pan, and add more oil as needed

--- To air fry ---

Preheat your air fryer if required. Once preheated, line with parchment paper

Scoop spoonfuls of the mixture onto the paper

Using a fork, press the patties down into a flatter shape

Air fry at 200℃ for 16 minutes, carefully flipping half way through the cooking time
