Ingredients

  • 12 ounces pasta (such as penne or medium shells)
  • 2 cups roasted red peppers ((16 ounce jar), drained)
  • 1/2 cup chicken broth (low sodium)
  • 1 cup heavy cream
  • 6 fresh basil leaves
  • 1 tablespoon olive oil
  • 1/2 pound Italian sausage (casings removed)
  • 1 medium shallot (chopped)
  • 2 cloves garlic (minced)
  • 1/2 teaspoon salt (or to taste)
  • 1/2 cup Parmesan cheese (freshly grated)

Instructions

    Cook the pasta according to package instructions. Drain and set aside.
