📝 Ingredients

  • 2 teaspoons salt, divided
  • 6 medium Yukon gold potatoes
  • 1/2 cup tomato sauce
  • 2 tablespoons olive oil
  • 2 teaspoons smoked paprika
  • 2 teaspoons dried thyme
  • 1/2 teaspoon pepper

👨‍🍳 Instructions

  1. 1Preheat the oven to 400 F.
  2. 2Line a baking sheet with parchment paper
  3. 3Add 1 ½ teaspoons of salt to a pot of water and bring to a boil.
  4. 4Peel the potatoes.
  5. 5Cube the potatoes.
  6. 6Add them to the pot of boiling water and cook for 6 minutes until al dente, then drain.
  7. 7Add the potatoes to a bowl with the tomato sauce, olive oil, smoked paprika, dried thyme, remaining salt, and pepper and toss to coat.
