📝 Ingredients
- 6 eggs
- 1/3 cup olive oil
- 3 garlic cloves, peeled and thinly sliced
- 1/8 teaspoon crushed Sichuan peppercorns
- 1/4 teaspoon crushed red pepper flakes
- 2 teaspoons fresh minced ginger
- 1/2 cup chopped fresh scallions
- 2 teaspoons rice vinegar
- 2 teaspoons sesame oil
- 1 1/2 teaspoon sesame seeds
- 1/2 teaspoon salt
- Pinch black pepper
👨🍳 Instructions
- 1Fill a large saucepan or pot with water and bring it to a boil over high heat.
- 2Once the water is boiling, carefully add the eggs, and reduce the heat to medium. Cook for 6 ½ minutes, stirring frequently (this will help keep the egg yolks in the center of the egg).
- 3Transfer the eggs to a bowl of ice water and thoroughly chill them.
- 4Once chilled, peel the eggs (don’t cut the eggs in half until ready to serve them).
- 5Heat the olive oil in a medium skillet over medium heat.
- 6Once the oil is hot, add the sliced garlic, and fry until it’s very lightly golden (the garlic will continue to darken once it’s removed from the skillet).
- 7Use a slotted spoon to remove the fried garlic and set it aside to drain on paper towels.
- 8Reduce the heat to low and add the Sichuan peppercorns, red pepper flakes, and minced ginger to the skillet.
- 9Sauté for 2 minutes or until fragrant.
- 10Transfer the fragrant oil and seasonings to a medium bowl and add the scallions, vinegar, sesame oil, sesame seeds, salt, and pepper.
- 11Stir to combine the topping.
- 12Slice the eggs in half and transfer them to a serving bowl, plate, or platter.
- 13Spoon the topping over the eggs and top them with slices of fried garlic before serving.
