  • 1 pound lo mein or ramen noodles
  • 2 tablespoons vegetable oil, divided
  • 1 pound shrimp, peeled and deveined
  • 2 garlic cloves, minced
  • 1 teaspoon ground fresh ginger
  • 1 red bell pepper, julienned
  • 5 ounces mushrooms, thinly sliced
  • 1/4 cup soy sauce
  • 1 1/2 tablespoons hoisin sauce
  • 1/2 tablespoon brown sugar
  • 2 teaspoons rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 tablespoon cornstarch
  • 1 (14–ounce) package coleslaw mix
  • Scallions, sliced, to garnish

    Boil or prepare the noodles as directed on the package.

    Drain and set aside.

    Heat 1 tablespoon of oil in a large saucepan or wok over medium-high heat.

    Add the shrimp, garlic, and ginger, and cook, stirring, until the shrimp is just cooked through.

    Transfer the shrimp to a plate and set it aside.

    Heat the remaining 1 tablespoon of oil in the same pan over medium-high heat.
