📝 Ingredients

  • 6 tbsp oil
  • 2 lb beef (lamb or chicken [cut into 2-inch cubes])
  • 1 tsp dried thyme
  • 2 tsp chicken bouillon
  • 1 tsp cayenne pepper
  • 1 tsp Salt and pepper (to taste)
  • 3 cloves garlic (minced or very finely chopped)
  • 1/2 tsp ginger (freshly grated)
  • 1 medium onion (sliced)
  • 4 ripe tomatoes (diced into about 1/2 inch cubes)
  • 2 tbsps tomato paste
  • 3 lb russet potatoes (or Irish potatoes [peeled and cut into 2-inch cubes])
  • 2 cups chicken broth
  • 1 red bell pepper (seeds removed and sliced into strips)
  • 1 green bell pepper (seeds removed and sliced into strips)

👨‍🍳 Instructions

  1. 1Heat the oil in a pan; once hot (not smoking), add the beef and seasonings - thyme, chicken bouillon, cayenne pepper, and salt and pepper. Continue stirring in the oil until the seasonings are well distributed, and the meat is well browned.
  2. 2Stir in the onions, tomatoes, and tomato paste. Add the garlic and ginger, cover, and cook on medium heat for about 5 minutes, until the tomatoes break down and release their juice.
  3. 3Add the potatoes and the chicken broth, stir, cover, and cook for about 20 minutes until the potatoes are tender enough to cut easily with a spoon.
  4. 4Add the bell peppers about 3-4 minutes before the end of the cooking time and continue to cook until they soften but still have a bite to them.
  5. 5You can serve it as a complete meal or serve it with a side of crusty bread.
