Easy ground beef fried rice with frozen veggies, cold rice, and soy sauce—quick dinner made in one pan.

📝 Ingredients

  • 2 Tablespoons Vegetable Oil (divided)
  • 1 Pound Ground Beef
  • 4 Cloves Garlic (minced)
  • 1/2 medium yellow onions (diced)
  • 1/2 cup broccoli (diced)
  • 1/2 cup carrots (diced)
  • 1/2 Teaspoon fresh ginger (grated )
  • 3 large eggs (Beaten)
  • 2 cups rice (cooked, leftover cold rice is great)
  • 1/4 cup low sodium soy sauce (or liquid aminos or tamari)
  • 1 tablespoon Sesame Oil
  • 2 meidum Green Onions (Sliced)
  • salt and pepper to taste

👨‍🍳 Instructions

  1. 1In a large skillet over medium-high heat, heat 1 Tablespoon of oil.
  2. 2Add the ground beef, garlic, onion, carrots, ginger, salt, and pepper.
  3. 3Cook, breaking the meat up as you go, for 6-8 minutes, until the beef is browned and at 160℉.
  4. 4Drain the meat and transfer to a plate.
  5. 5Return the skillet to the heat and add another 1 Tablespoon of oil.
  6. 6Add the beaten eggs to your pan and cook, stirring occasionally, until they're scrambled.
  7. 7Push the eggs to the side of the pan and add in the rice and ground beef.
  8. 8Drizzle evenly with soy sauce and sesame oil and stir, cooking for 2 more minutes.
  9. 9Remove the pan from the heat and top with green onions, if desired.
