Teriyaki Fried Rice

This Teriyaki fried rice is easy to make with leftover cooked rice and any vegetables you have in hand. Juicy ground beef, fluffy eggs and a homemade teriyaki sauce.
Ingredients
- 2 and 1/2 tablespoons vegetable oil (divided)
- 1 pound ground beef (453 g)
- 1 medium white onion
- 1 teaspoon minced garlic
- 1 1/2 cups veggies ( of choice, carrot, broccoli, bell pepper (7.05 oz | 200 g))
- 2 large eggs (beaten)
- 3 cups cooked rice (1 lb | 453 g)
- 1/4 cup soy sauce (2.70 fluid oz | 80 ml)
- 1/4 cup brown sugar (3.73 oz | 106 g)
- 1/2 teaspoon ginger (minced )
- 1/4 teaspoon white pepper
- 1 teaspoon cornstarch
- 1/4 cup water (2.02 fluid oz | 60 ml)

Heat a large non-stick skillet on medium high heat with 1 tablespoon of oil. Sear beef, onion and garlic until beef is browned. About 4-5 minutes. Remove and set aside.

Add 1 tablespoon of oil in the skillet. Turn to medium heat. Saute veggies until tender. About 3-4 minutes. Remove and set aside with the beef.

Add ½ tablespoon of oil in the skillet and scrambled eggs into tiny pieces.

Teriyaki sauce: Combine all ingredients in a bowl.

In a large bowl or directly in the skillet, combine rice, veggies, beef and sauce. Stir fry in the skillet for 1-2 minutes.

Garnish with green onions and serve.
