Apple Cinnamon Baked Oatmeal is subtly sweet and super quick to whip up the morning of or night before. This make-ahead breakfast dish tastes just as good the next day as it does straight from the oven.

📝 Ingredients

  • 1/2 cup oil (vegetable or coconut)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 3 cups whole oats (uncooked)
  • 1 cup whole milk
  • 1 medium granny smith apple (diced into 1/2 inch cubes)
  • 1 Tablespoon pure vanilla extract
  • 2 teaspoons baking soda
  • 2 teaspoons apple pie spice
  • 1 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional for topping)
  • 1 Tablespoon caramel sauce (optional)

👨‍🍳 Instructions

  1. 1Preheat the oven to 350F.
  2. 2In a large bowl combine the oil, sugars, and eggs. Whisk well.
  3. 3To the same bowl add the remaining ingredients and combine until all the oats are fully coated.
  4. 4Transfer to a well-greased 10-inch cast iron skillet. Top with a sprinkle of cinnamon if desired.
  5. 5Bake for 20 minutes covered with tinfoil. Remove tinfoil and bake an additional 10 minutes. Enjoy with caramel sauce, milk, whipped cream, etc.
