Fluffy No-Oil Rice Pilaf

A light and fluffy rice pilaf, with added mushrooms, onions, spinach, and bell pepper. This recipe is 100% vegan, and needs no oil or butter to prepare. Super easy and super tasty, this will be your goto rice recipe for all those special occasions.

Ingredients

  • 1 cup Angel Hair Pasta ( (or Vermicelli))
  • 1/2 Onion ((diced))
  • 1/2 Bell Pepper ((diced))
  • 2 cloves Garlic ((minced))
  • 4 Mushrooms ((diced))
  • 1 cup Baby Spinach ((chopped))
  • 2 cups Rice ((at least 1/4 cup wild rice))
  • 3 cups Low Sodium Vegetable Broth ( )
  • 1/4 cup Soy Sauce ((low sodium))
  • 1/4 cup Almond Slivers ((optional))

Instructions

    Break up pasta into small inch long pieces

    Lightly toast pasta and almonds (if using) in a skillet until slightly browned

    Add to large pasta pot with a lid

    Chop all veggies and add to pot

  5. 5

    Rinse and drain rice

    Lightly toast rice in same skillet, over med-low heat until dry and toasty

    Add rice to pot

    Add veggie broth and soy sauce

  9. 9

    Bring to a boil and then reduce heat to simmer

    Simmer 20 minutes

    Remove from heat and carefully remove lid

    Drape clean kitchen towel over pan and replace lid

  13. 13

    Let rest 5-10 minutes

    Remove lid and towel and fluff with fork

  15. 15

    Season to taste
