Oatmeal Cookie Apple Crisp

This Oatmeal Cookie Apple Crisp has a simple spiced apple filling, topped with a super easy oatmeal cookie crumble topping!
Ingredients
- 4 medium apples (peeled, cored and sliced (I used Granny Smith + Mcintosh))
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 package Krusteaz Brown Sugar Oatmeal Cookie Mix
- 1/2 cup unsalted butter (softened)
- v cup pecans (chopped)
Instructions
- 1
Preheat your oven and prepare a baking dish or individual ramekins.
- 2
In a bowl, combine the peeled, cored, and sliced apples with the brown sugar, ground cinnamon, and ground nutmeg. Toss until the apples are well coated, then transfer to the baking dish.
- 3
In a separate bowl, combine the Krusteaz Brown Sugar Oatmeal Cookie Mix with the softened unsalted butter, mixing to create an oatmeal cookie crumble texture (skip the egg called for on the package).
- 4
Mix the chopped pecans into the crumble topping.
- 5
Spread the oatmeal cookie crumble and pecan mixture evenly over the spiced apple filling.
- 6
Bake for about 40 minutes, or until the apples are tender and bubbling and the topping is golden and crisp.
- 7
Serve warm, ideally with a scoop of vanilla ice cream.
