Nilat-an na Tiil ng Baboy is a Filipino dish from Bohol simply prepared by cooking marinated pork legs in its own steam with soy sauce, saba bananas and ube.

📝 Ingredients

  • 1 1/2 kg pork leg, sliced into sections
  • 4 pcs saba bananas, sliced
  • 300 g ube, cubed
  • 1 cup water
  • 1 tsp annatto powder
  • 1 tbsp freshly ground black pepper
  • 6 cloves garlic, minced
  • 3 tbsp soy sauce
  • 2 tbsp cane vinegar
  • 2 tbsp sugar
  • 2 tsp salt
  • 4 pcs bay leaves

👨‍🍳 Instructions

  1. 1In a bowl combine all marinade ingredients. Set aside
  2. 2In a pot add pork leg then pour the marinade, mix well using hands making sure pork is evenly coated with the marinade. Cover pot then set it aside for 2 hours.
  3. 3Place pot over stove top over medium heat, bring it to a slow boil then put heat to the lowest setting.
  4. 4Let it simmer in very low heat for 1 hour and 15 minutes or until meat is tender. While simmering, when the liquid starts to dry add the water.
  5. 5Add the ube then continue to simmer for 15 more minutes.
  6. 6Add the saba bananas continue to simmer for 15 more minutes.
