Stir Fried Cauliflower with tomatoes, wood ear mushrooms and oyster sauce. A quick Chinese-inspired vegetable dish full of flavour.

📝 Ingredients

  • 1 medium cauliflower, cut into bite-sized florets
  • 2 tbsp dried wood ear mushrooms, soaked and sliced
  • 2 medium tomatoes, diced
  • 3 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 3 spring onions, sliced
  • 2 dried chillies (optional)
  • 1 tbsp oyster sauce (or vegan alternatives)
  • 1/2 tsp salt, or to taste
  • 1/2 tsp sugar (optional)
  • 1/4 cup water or vegetable stock
  • 1 tsp cornstarch mixed with 1 tbsp water
  • 3 tbsp oil

👨‍🍳 Instructions

  1. 1Soak the dried wood ear mushrooms in warm water until softened. Drain and slice into bite-sized pieces.
  2. 2Heat the oil in a wok over high heat. Stir-fry the cauliflower for 3–4 minutes until lightly charred but still crisp.
  3. 3Add the garlic, ginger, and dried chillies. Stir-fry for about 30 seconds until fragrant.
  4. 4Add the diced tomatoes and cook until they begin to soften and release their juices.
  5. 5Stir in the wood ear mushrooms, oyster sauce, salt, sugar (if using), and water or stock. Cover and cook for 4 minutes.
  6. 6Pour in the cornstarch slurry and stir until the sauce thickens and coats the vegetables.
  7. 7Toss through the spring onions and serve immediately with steamed rice.
