Pancit Pares
Fresh noodles tossed in rich beef gravy and topped with tender braised brisket, garlic, vegetables, and aromatic spices.
Ingredients
- 700 g beef brisket, cut into strips or cubes
- 4 cups beef stock
- 1/2 cup soy sauce
- 6 tbsp brown sugar
- 3 star anise
- 2 dried bay leaves
- 1 tsp ground black pepper
- 1 red onion, minced
- 8 cloves garlic, minced
- 2 tbsp cornstarch
- 4 tbsp water
- fish sauce, to taste
- oil
- fried garlic, for garnish
- 500 g fresh yellow noodles
- 1/2 cup water
- 1 carrot, julienned
- 1/3 small Chinese cabbage, chopped
- 2 shallots, sliced
- 6 cloves garlic, minced
- oil
- freshly ground black pepper
- fish sauce, to taste

Heat oil in a pot and sauté the garlic and onions until fragrant.

Add the beef and brown on all sides.

Pour in the beef stock, soy sauce, brown sugar, star anise, bay leaves, and black pepper.

Bring to a boil, then reduce heat and simmer for about 2 hours or until the beef is very tender.

Mix the cornstarch with water and pour into the pot.

Stir until the sauce thickens, then season with fish sauce to taste.

Set aside and keep warm.

Soak the fresh noodles in boiling water for 1 minute. Drain well.

Heat a wok over high heat and add a little oil.

Sauté the shallots and garlic until fragrant.

Add the carrots and stir-fry for 1 minute.

Add the cabbage and continue to stir-fry for another minute.

Add the noodles and toss for 2 minutes.

Pour in the water and about 1/2 cup of the pares sauce.

Toss continuously until the noodles absorb the sauce.

Season with freshly ground black pepper and fish sauce. Add more pares sauce if desired.

Transfer the noodles to a serving platter.

Generously top with the braised beef and extra pares sauce.
