Mango Salad
Mango, cucumber, capsicum, herbs, peanuts, lime juice and fish sauce combine in this fresh and vibrant Thai-inspired salad.

Ingredients
- 3 medium or 2 large mangoes, peeled and sliced into strips
- 1 small carrot, sliced into strips
- 1/2 small telegraph cucumber, sliced into strips
- 1 red capsicum, stemmed, seeded, and sliced into thin strips
- 1/4 medium red onion, very thinly sliced
- 2 cups mixed fresh basil and mint leaves, reserving some for garnish
- 1/2 cup chopped toasted peanuts, reserving some for garnish
- 2 tbsp fresh lime juice
- 1 tbsp avocado oil
- 1 1/2 tbsp fish sauce
- 1/2 tsp honey
- 1/4 tsp freshly grated ginger
Instructions

In a large bowl, combine the mango, carrot, cucumber, red capsicum, and red onion.

In a separate small bowl, whisk together the lime juice, avocado oil, fish sauce, honey, and grated ginger until well combined.

Pour the dressing over the salad ingredients and toss gently to coat.

Add the basil, mint, and toasted peanuts, then toss again until evenly distributed.

Taste and adjust seasoning if necessary.

Garnish with the reserved herbs and peanuts.
