Ingredients

  • 3 very ripe bananas (the riper, the better!)
  • 1/2 cup sugar (or 3/4 cup if you have a sweet tooth)
  • 1/2 cup buttermilk or unsweetened yogurt
  • 2 medium-sized eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup oil (or melted butter)
  • 1 1/2 cups all-purpose flour (200g)
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

    Start by preheating your oven to 350°F (175°C). This ensures that your banana bread bakes evenly.

    In a large mixing bowl, mash the very ripe bananas with a fork or potato masher until smooth. A few small lumps are perfectly fine!

    To the mashed bananas, add the sugar, buttermilk, eggs, vanilla extract, and oil. Whisk everything together until well combined.

    Into a separate bowl, sieve all-purpose flour, baking soda, baking powder, and salt. This helps to evenly distribute the leavening agents throughout the flour.

    Combine Wet and Dry Ingredients: Gently fold the dry ingredients into the wet mixture. Be careful not to overmix— stir just until the dry ingredients are incorporated into the wet ingredients. A few small lumps are perfectly fine!

    Grease your loaf pan or line it with parchment paper for easy removal. Pour the batter into the prepared pan

    Place the loaf pan in the preheated oven and bake for 50-60minutes(depending on the size of the loaf pan), or until a toothpick inserted into the center comes out clean. If the top is browning too quickly, you can cover it loosely with aluminum foil halfway through baking.

    Once baked, remove the banana bread from the oven and let it cool in the pan for about 5 minutes. Then transfer it to a wire rack to cool completely.
