Pickled Onions

Ingredients
- 1 medium red onion (thinly sliced)
- 1 cup white vinegar
- 1 cup water
- 2 tablespoons sugar
- 1 tablespoon salt
- Optional: 1 garlic cloves and 1 Scotch bonnet ((seeds removed))

Slice the red onion thinly using a knife, mandoline, or julienne slicer. Use a claw grip when cutting to protect your fingers.

Pack the sliced onions into a clean glass jar.

In a small pot, combine vinegar, water, sugar, and salt. Bring to a simmer, stirring until dissolved. Add optional flavor boosters if desired.

Pour the hot liquid over the onions, ensuring they are fully submerged. Fill the jar to the brim to minimize air exposure.

Let the jar cool to room temperature, then refrigerate.
