Delicious and savory beef and potato pottage

📝 Ingredients

  • 500 grams beef (see note 1 for recommended cuts )
  • 1 teaspoon salt
  • 1 bouillon cube (crushed)
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme (dried)
  • 2 tablespoons oil
  • 3 large potatoes (peeled and cut into small chunks)
  • 1/2 teaspoon salt
  • 1 cup water
  • 2 tablespoon butter
  • 1 large onion (chopped)
  • 3 cloves garlic (minced)
  • 2 carrots (sliced)
  • 1 green bell pepper (chopped)
  • 1 red bell pepper (chopped)
  • 1 scotch bonnet pepper (chopped (optional))
  • 1 bouillon cube (crushed)
  • Salt (to taste)
  • thyme (fresh)
  • basil (fresh)
  • 1 tablespoon cornstarch
  • 2 tablespoon water

👨‍🍳 Instructions

  1. 1In a bowl, season beef with salt, crushed bouillon, paprika, garlic powder, onion powder, black pepper, thyme, and oil.
  2. 2Mix well, cover with cling film, and marinate in the fridge for at least 60 minutes.
  3. 3Peel and cut the potatoes into small chunks. Rinse well, drain, and set aside.
  4. 4Heat oil in a wide pot over medium-high heat.
  5. 5Add the marinated beef and cook, stirring occasionally, until browned on all sides.
  6. 6Once the beef is browned, add the potatoes, water, and salt.
  7. 7Mix well, cover, and cook for 8-10 minutes until the potatoes are tender.
  8. 8In a separate pan, melt butter over medium heat. Sauté the onions and garlic until translucent and fragrant.
  9. 9Add carrots, green and red bell peppers, scotch bonnet, crushed bouillon cube, salt, and fresh herbs. Stir-fry for 5 minutes.
  10. 10Add the vegetable stir fry to the beef and potatoes.
  11. 11In a small bowl, mix cornstarch with 2 tablespoon water to form a slurry.
  12. 12Slowly pour into the pot while stirring. Cover and cook for an additional 3-4 minutes until thickened.
