Peanut butter Banana bread

Ingredients
- 3 very ripe bananas ((the riper, the better!))
- 1/2 cup sugar
- 1/2 cup buttermilk or unsweetened yogurt
- 2 medium-sized eggs
- 1/4 cup peanut butter ((see note 1))
- 1 teaspoon vanilla extract
- 1/2 cup melted butter ((or oil))
- 1 1/2 cups all-purpose flour ((200g))
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- Handful of crushed peanuts

Mash the bananas in a large bowl until mostly smooth.

Stir in the sugar, buttermilk, eggs, peanut butter, vanilla, and melted butter until well combined.

Sift in the flour, baking soda, baking powder, and salt. Gently fold the mixture together until no streaks of flour remain. Don’t overmix!

Line a loaf pan with parchment paper or grease lightly. Pour in the batter and smooth the top.

Using a knife, run a deep line down the middle of the batter. This helps the bread bake evenly and gives it that beautiful clean split on top as it rises.

Add crushed peanuts (see note 2 on how to crush).

Bake at 350°F (175°C) for 50–55 minutes or until a toothpick inserted in the center comes out clean.

Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
