South Indian Style Beans Egg Curry Recipe

Soft scrambled eggs cooked with beans in a rich masala curry — perfect with rice or roti.

Ingredients
- 2 onions (roughly chopped)
- 1 green chili
- 5 garlic cloves
- 1- inch ginger
- 2 tomatoes
- 5 –6 almonds (soaked)
- 2 tsp oil
- 1/4 tsp turmeric powder
- 1 tsp Kashmiri chili powder
- 1 tsp chili powder
- 1 1/2 tsp coriander powder
- 1 1/2 tbsp curd
- 1 tsp garam or mutton masala
- 1 cup water
- 1/2 –1 tsp salt
- 300 g beans (3 cm pieces)
- 3 eggs
- 1/2 tsp oil (for scrambling)
Instructions

Blend onions, tomato, chili, garlic, ginger, and almonds to a paste.

Heat oil, add all spice powders, and mix on low flame.

Add paste, cook till thick and oil separates.

Add curd and garam masala, mix well.

Add water, salt, and beans. Cook 10 mins.

Beat eggs with salt and a spoon of curry.

Scramble eggs lightly, mix into curry.

Add a bit more water, simmer 2–3 mins.

Serve hot with rice or roti.
