Ingredients

  • 32 ounces canned chickpeas (drained and rinsed)
  • 1 cup baby tomatoes (halved)
  • 1 cup Persian or English cucumbers (1/4" thick slices)
  • 1 cup red bell pepper ( 1/4" dice)
  • 1/2 cup red onion (1/8" thick slices)
  • 1/2 cup kalamata olives (sliced)
  • 1/4 cup crumbled feta cheese
  • 1 tablespoon chopped parsley
  • 1 tablespoon sliced basil
  • 1 tablespoon sliced mint
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 1 tablespoon red wine vinegar
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons extra-virgin olive oil

    Assemble the Chickpea Salad – In a large bowl, add the chickpeas, tomatoes, cucumber, bell pepper, red onion, olives, feta, parsley, basil, and mint.
