I love making spinach salad because it's a quick and healthy way to get my daily dose of greens packed with nutrients and flavor.
📝 Ingredients
- 5 ounces baby spinach (washed and dried)
- 1/2 cup sliced Fuji apples (or Honeycrisp, 1/8" thick)
- 1/4 cup sliced red onions (or shallots, 1/8" thick)
- 1/2 cup candied pecans
- 1/4 cup dried cranberries
- 1/4 cup crumbled goat cheese
- 3 tablespoons apple cider vinegar
- 2 tablespoons honey (or maple syrup)
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 2 teaspoons dijon mustard
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/2 cup olive oil
👨🍳 Instructions
- 1Prepare the Spinach – Rinse the spinach under cool water. Dry the leaves in a salad spinner.
