Warm up with this Portuguese collard greens soup made with potatoes, pumpkin, onions and leek. Healthy, easy and ready in 50 minutes.
📝 Ingredients
- 2 medium potatoes
- 1.5 liters (about 6 cups) water
- 4 medium onions
- 1 turnip
- 1 leek
- Collard greens (about 900 grams (2 pounds))
- 3 tablespoons olive oil
- 1 pumpkin slice (about 150 grams (5 1/3 ounces)
- Salt (to taste)
👨🍳 Instructions
- 1Cut the potatoes, onions, the turnip and the leek into pieces and place them in a large pot. Pour in 1.5 liters (about 6 cups) of water, ensuring the vegetables are completely covered.
- 2Cover the pot with a lid and bring to a boil over medium-high heat. Once boiling, reduce to medium heat and cook for 25 to 30 minutes, or until the vegetables are tender.
- 3Once the vegetables are tender, remove the pot from the heat and blend the soup with an immersion blender until smooth and creamy. Season with olive oil and a little salt, stir with a wooden spoon and return the pot to medium heat.
- 4Once it starts boiling, add the collard greens cut into small pieces and diced pumpkin, and cook for 15 to 20 minutes, or until both are tender.
- 5Turn off the heat and serve immediately with slices of rustic bread.
