Buffalo Sauce Burgers with Blue Cheese Celery Slaw

Spicy buffalo sauce is mixed with the burger meat, topped with a celery slaw mixed with blue cheese dressing.
Ingredients
- 4 cups (200 grams) shredded cabbage or coleslaw mix
- 1 cups (105 grams) thinly sliced celery
- 1/2 cup (120 grams) blue cheese dressing
- 1/2 cup cayenne pepper hot sauce (Franks Red Hot Original)
- 1/3 cup melted butter or ghee
- 1 1/2 pounds (680 grams) ground beef
- Blue cheese crumbles

To a large bowl add the cabbage and celery, or coleslaw mix. Add the blue cheese dressing and mix well, cover and refrigerate.

To a small bowl, mix the hot sauce and melted butter together. Add the meat to a bowl and add 4 tablespoons buffalo sauce. You don’t want the meat too wet or the burgers will fall apart. Use a fork to mix well, then divide the meat into 4 equal portions (6.6 ounces/189 grams each) and shape into burger patties.

Preheat your grill on high. Grill the burgers on high on the first side for 3-4 minutes until lightly charred. Flip and cook to your preferred temperature. Just before they are done, top with blue cheese crumbles to melt.

Heat 2 tablespoons oil in a heavy or cast iron pan over high heat. When the oil is hot, add the burgers and char on the first side for 3-4 minutes, flip and cook. Just before they are done, top with blue cheese crumbles to melt.

Serve on buns topped with the slaw and remaining buffalo sauce.
