📝 Ingredients

  • 1/2 cup (100 grams) light or dark brown sugar
  • 1 tablespoon salt
  • 1 teaspoon pepper
  • 1 teaspoon smoked paprika
  • 1 tablespoon chili powder
  • 1 tablespoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 tablespoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • 4-6 pounds (2 - 3 kg) pork spare ribs
  • Barbecue sauce

👨‍🍳 Instructions

  1. 1Mix all the spice rub ingredients in a bowl. Rub all over the ribs and massage well into the meat.
  2. 2Wrap in plastic wrap for 2 hours, overnight is better.
  3. 3Remove the ribs from the plastic wrap and allow to sit at room temperature for 1 hour before cooking.
  4. 4Preheat oven to 350°F/177°C.
  5. 5Add the ribs to a foil pan or baking sheet lined with foil, meat-side up. Pour over some of the barbecue sauce.
  6. 6Cover tightly with foil and roast for 1 ½ hours.
  7. 7Preheat outdoor grill on high. Place the rack of ribs bone side down for about 5-7 minutes. Turn and repeat
  8. 8Serve with more sauce.
