Beef Stroganoff

A quick stroganoff using cube steaks, sirloin or tenderloin, cream soup, sour cream and mushrooms. Serve over hot cooked egg noodles.
📝 Ingredients
- 2 cups uncooked egg noodles
- 2 tablespoons butter, divided
- 2 teaspoons dried parsley flakes, divided
- 1-1/2 pounds cube steak, sirloin or tenderloin steak
- Kosher salt, freshly cracked black pepper and garlic powder, to taste
- 1 cup all-purpose flour
- 2 tablespoons cooking oil (olive oil, vegetable, canola or corn oil)
- 1 medium onion, halved and sliced
- 1 (8 ounce) package sliced fresh mushrooms
- 1 (10-1/2 ounce) can original cream of mushroom soup (Great for Cooking variety)
- 1-1/2 cups beef broth
- 1 teaspoon Worcestershire sauce
- 1/4 teaspoon Cajun/Creole seasoning, (like Slap Ya Mama), or to taste
- 1/2 cup of sour cream, or to taste
👨🍳 Instructions
- 1Prepare egg noodles according to package directions; drain, toss with 1/2 tablespoon of the butter and 1 teaspoon of the parsley flakes.
- 2Heat remaining butter with oil in a large, lidded skillet over medium high heat.
- 3Slice meat into 1/2-inch strips, about 1-1/2 inches in length, and cutting against the grain, seasoning both sides with salt, pepper and garlic powder.
- 4Toss in the flour, shaking away the excess. Brown meat in butter mixture on both sides, remove from skillet and set aside.
- 5Add onion to the skillet and cook for about 3 minutes, until softened and onions are slightly caramelized, scraping up browned bits from bottom of skillet.
- 6Add mushrooms and cook another 3 minutes.
- 7Push mixture to the sides of the pan, add the cream of mushroom soup to the center, add Worcestershire and stir in beef broth, until well blended.
- 8Draw the mushroom and onion mixture into the cream soup mixture. Bring to a boil, return meat to the pan, together with any accumulated juices, stir, cover, reduce heat to low.
- 9Simmer for approximately 30 minutes for cube steaks or 10 to 15 for sirloin/tenderloin, until thickened and meat is tender.
- 10Remove from heat, stir in parsley, Cajun seasoning and sour cream; taste and adjust seasonings.
- 11Serve over hot, cooked noodles.
