Microwave Orange Honey Glazed Baby Carrots

Baby carrots, steamed in orange juice in the microwave, then glazed with honey, cane or maple syrup and butter.
Ingredients
- 1 large (2 pound) bag of baby carrots, or about 8 medium sized carrots
- 1 teaspoon kosher salt
- Zest of one orange
- 1/2 cup of fresh orange juice
- 1/4 cup honey, pure cane syrup, maple syrup
- 1/4 cup (1/2 stick) butter
- Pinch of mace or nutmeg, optional
- 1/4 cup marmalade, optional
- 1/4 teaspoon freshly cracked black pepper, to taste
- 1 teaspoon dried parsley, optional

Rinse carrots and drain. If using regular sized carrots, peel and cut into sticks, thick rounds or chunks.

Zest the orange and set aside.

Juice the orange and place juice into a 4-cup microwave safe dish. Heat 1 minute on high.

Add the carrots, salt and orange zest. Stir to coat the carrots.

Cover and microwave 8 to 9 minutes on high. Actual time will depend on the wattage of your microwave. Stir again, then add the honey and butter.

Microwave uncovered in 1 minutes increments, on high, as needed until tender.

Stir in the marmalade, mace or nutmeg, pepper and parsley; toss to coat, taste and adjust salt as needed.
