📝 Ingredients

  • 1/2 cup Mango Puree
  • 1/2 litre Full Cream Milk
  • 2 tbsp Sugar
  • 1/4 tsp Cardamom Powder
  • Large Pinch Saffron/Kesar
  • 2 tbsp Chopped Dry Fruits (Almonds & Pistachios)
  • Chopped Mango as needed (to garnish)
  • Chopped Dry Fruits as needed (to garnish)

👨‍🍳 Instructions

  1. 1In a heavy pan heat 1/2 litre full cream milk. Boil it on low flame.
  2. 2As milk skin begins to form on top, push it away to the side and continue boiling the milk on low flame.
  3. 3Continue to boil the milk on low flame and in few minutes, it starts to bubble & raise.
  4. 4The milk boils and raises to the top of the pan, stir it continuously to bring it down and to remove the skin from top, pushing it to the sides.
  5. 5Now add 1/4 tsp cardamom powder and mix well.
  6. 6Continue to cook the milk on low flame stirring it continuously until it starts to reduce. Now add 2 tbsp chopped dry fruits like pistachios and almonds.
  7. 7Next add large pinch of saffron/kesar. Mix well.
  8. 8Keep boiling the milk on low flame, removing milk solids from the sides of the pan adding it back to the boiled milk.
  9. 9In 20 minutes, the milk should be reduced to half and milk should be thick with a golden yellow hue. Add 2 tbsp sugar. Mix well.
  10. 10Cook for 5-7 mins and then remove from heat. Let it cool down completely.
  11. 11Next add 1/2 cup mango puree (from one large mango, pureed without any sugar)
  12. 12Mix well until the mango puree and rabdi are combined.
  13. 13Remove onto a serving bowl, garnish with chopped pistachios & almonds along with mango pieces and saffron. Keep it covered with cling wrap/aluminum foil and store in fridge until ready to be served.
