Ingredients

  • 1 lb/ 500g minced meat/ ground beef
  • 1/2 - 1 teaspoon grounded grains of paradise/ black pepper
  • 1/2 teaspoon adobo seasoning or any all-purpose seasoning
  • salt as required
  • 6-8 plum tomatoes
  • 3 onions
  • 2 cloves garlic
  • scotch bonnet pepper as required
  • 1/4inch ginger (optional)
  • 4 tablespoons vegetable oil plus more as needed
  • 1 small bay leaf
  • 1 teaspoon adobo seasoning or chicken stock cube (optional)

Instructions

    Season minced meat or ground beef with grounded grains of paradise or black pepper, 1/2 teaspoon adobo seasoning or any all-purpose seasoning and salt. Set aside.

    Blend tomatoes, onions, scotch bonnet pepper, garlic and ginger if using together, set aside.

    Put two tablespoons of oil in a medium saucepan on fire. When hot, add seasoned minced meat or ground beef. Stir occasionally for about four minutes till no longer pink. Remove from saucepan and set aside.

    Add two tablespoons or more of oil as needed. Add one small bay leaf and the blended onions and tomatoes mixture. Add one teaspoon adobo seasoning or chicken stock if using. Cover and simmer for ten to twelve minutes till cooked through or no longer tasting raw.

    Add minced meat, taste and add salt if needed. Serve with rice or boiled yam.
