  • 113 g (1/2 cup) Westgold salted butter.
  • 1/4 teaspoon salt
  • 1/4 teaspoon granulated sugar
  • 60 g (1/4 cup) ice-cold water
  • 1/2 teaspoon apple cider vinegar or lemon juice
  • 90 g (3oz) cream cheese, room temperature
  • 2 teaspoon fresh thyme leaves
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • Pepper to taste
  • 300 g (10.5oz) new potatoes
  • 30 g (1oz) grated parmesan cheese
