This Creamy Pesto Alfredo Sauce is a quick and easy sauce to throw together for any occasion. It's especially quick if you keep a jar of homemade pesto in the fridge at all times, like I do. If not, making fresh pesto is super easy and store bought works just fine, too. Toss this creamy pesto sauce with pasta to make the perfect weeknight dinner!
📝 Ingredients
- 1 tablespoon of olive oil
- 1/2 cup of onion, diced
- 1.5 cups of cream
- 1 cup of parmesan cheese, freshly grated (plus more for serving)
- 1/2 cup of white wine
- 1/2 cup of pasta water
- 1 tablespoon of Brazilian sofrito (or 3 cloves of garlic minced)
- 1/2 cup of pesto
- 1 pound of pasta
- salt and pepper to taste
- fresh basil (Optional for garnish)
👨🍳 Instructions
- 1Start by cooking the pasta al dente, according to the instructions of the package - once the pasta is almost done cooking, take out about a half a cup of pasta water, and set aside. You need this for the sauce, so do not discard it.
- 2Heat the olive oil in a large skillet over medium heat.
- 3Add the diced onions to the skillet, and sautee until soft, about 2-3 minutes.
- 4Next, add in the Brazilian sofrito, or the garlic, and sautee until fragrant. You do not want these to brown.
- 5Add in the cream and the wine. Stir to combine before adding the pesto and stirring again. Let it simmer.
- 6Pour in the pasta water, and stir.
- 7Add the al dente pasta to the pan, then add in the cheese. Stir until the pasta is coated in the sauce and the cheese has melted into it.
- 8Serve with parmesan and fresh basil.
