📝 Ingredients
- 1 cup of leftover beans, cooked and seasoned (heaping cup) (make sure there is at least 1/2 cup of liquid)
- 1/4 cup onion, diced
- 3 cloves of garlic, minced
- 1 thick slice of bacon, diced (approximately 1/4 cup)
- 2 tablespoons of extra virgin olive oil (plus more for serving)
- 2 tablespoons of Brazilian cassava flour (farinha de mandioca)
- salt and pepper to taste
👨🍳 Instructions
- 1Add your leftover beans to a food processor and pulse until smooth, and set aside.
- 2In a medium pan over medium heat, drizzle about a tablespoon of olive oil.
- 3Add in the diced bacon and fry until crispy.
- 4When the bacon is crispy, scoop it out of the pan using a slotted spoon and place it into a plate lined with paper towels and set it aside.
- 5Add the diced onions to the pan with the bacon fat and sauté until translucent.
- 6Next add the minced garlic and sauté until fragrant and lightly golden.
- 7Add the beans to the pan and stir to combine.
- 8When the beans start to simmer, slowly sprinkle the Brazilian cassava flour and stir over low heat until it thickens into a soft puree consistency.
- 9Serve drizzled with olive oil and the crispy bacon. You can also add a splash of your favorite vinegary hot sauce!
