A quick homemade paella using cooked brown rice, chicken, shrimp, turmeric, smoked paprika, and fresh lime juice. Perfect for a special occasion or weekly meal prep!

📝 Ingredients

  • 2 tablespoons coconut oil
  • 1/3 red onion (, diced)
  • 1 garlic clove (, minced)
  • 1 pound chicken breasts (, cut in cubes)
  • 1/2 pound shrimp (, peeled and deveined)
  • 1 tablespoon smoked paprika
  • Salt and pepper to taste
  • 2 cups cooked brown rice
  • 1 small tomato (, diced)
  • 1 cup low sodium chicken broth
  • 1/3 teaspoon turmeric
  • 1 cup frozen peas
  • Fresh lime juice (, cilantro or parsley for garnish)

👨‍🍳 Instructions

  1. 1In a skillet, melt coconut oil on medium-high heat. Add red onion and minced garlic. Cook until the onions are browned and translucent.
  2. 2Add chicken and cook for a few minutes then add shrimp. Cook for a few minutes. (It's ok if both are a little pink, they will continue to cook as you add the rest of the ingredients). Add paprika, salt and pepper. Stir.
  3. 3Next, add brown rice and tomatoes. Stir and reduce to medium heat. Add chicken broth and turmeric. Simmer and cook for 3 minutes.
  4. 4Lastly, add frozen peas and stir. Allow the paella to simmer for about 5 minutes, then garnish with cilantro, parsley, and/or lime juice. Enjoy!
