Rub, baste, bake is all it takes to make this baked lime salmon recipe. An easy salmon dinner that's beyond delicious - the rub is made with spices that not only add flavor, but also, bring out this stunning bright color! And the honey-lime on top adds some buttery bright sweetness to the salmon making it even more special.

📝 Ingredients

  • 1 pound Salmon
  • 3 tablespoons unsalted butter
  • 2 tablespoon honey
  • 2 tablespoons lime juice (about 2 limes)
  • 1/2 teaspoon lime zest
  • 3 cloves of garlic, minced (or 1 tsp of Brazilian Sofrito)
  • 3 tablespoons fresh cilantro, roughly minced
  • 1 teaspoon ground smoked paprika
  • 1/2 teaspoon ground achiote pepper (optional)
  • pinch of black pepper
  • 1/4 teaspoon ground cayenne pepper
  • 1 teaspoon kosher salt

👨‍🍳 Instructions

  1. 1Line a baking sheet with foil.
  2. 2In a small bowl, combine all the peppers and salt. Then, rub the salmon on both sides and place it on the lined baking sheet and set aside while you take care of the next steps.
  3. 3Position a rack in the middle of your oven, and preheat it to 375F.
  4. 4While your oven is heating up, add the butter and the garlic to a small microwave safe bowl, and microwave for 10-20 seconds - just enough to melt the butter.
  5. 5Then, add in the honey, half of the chopped cilantro, the lime juice and the zest to the melted butter mixture, and whisk to combine.
  6. 6Using a small culinary brush, brush the salmon on both sides. Then, roll or fold the sides of the foil around the salmon (like a little boat) and pour any remaining honey butter mixture on top. The foil boat will ensure all that sauce stays under/around the salmon while it bakes.
  7. 7Bake until cooked through (about 15-20 mins) depending on how thick your fish is and how "done" you like your salmon.
  8. 8Serve with the remaining chopped cilantro and lime slices!
